A refreshing Greek yogurt-based sauce with cucumber, garlic, and herbs, perfect for dipping or as a condiment.

Ingredients

Vegetables and herbs

  • 0.75 cup English cucumber, partially peeled (striped)
  • 1 teaspoon kosher salt, divided
  • 4 to 5 cloves garlic cloves
  • 1 teaspoon white vinegar
  • 1 tablespoon Early Harvest Greek Extra Virgin Olive Oil
  • 2 cups plain Greek yogurt
  • a handful chopped fresh dill or mint (optional)
  • 1/4 teaspoon ground white pepper

For serving

  • Warm pita bread
  • Sliced vegetables

Instructions 

  • Grate the cucumber, toss with 1/2 tsp salt, then squeeze out excess liquid.
  • Mix garlic, remaining salt, vinegar, and olive oil in a bowl.
  • Add grated cucumber, yogurt, pepper, and herbs to the bowl; stir to combine.
  • Refrigerate for 30 minutes to 2 hours to thicken and meld flavors.
  • Stir before serving, drizzle with extra olive oil if desired, and serve with pita or vegetables.

Notes

For best flavor, let the sauce chill before serving.
