Ingredients

Protein

  • 8 oz firm tofu (drained)
  • 1 piece sweet potato (peeled and cubed)
  • 1 piece onion (sliced)
  • 2 cloves garlic (minced)
  • 1 tablespoon peanut or vegetable oil
  • 1 cup chickpeas (drained)
  • 0.5 teaspoon salt (plus more to taste)
  • 0.5 teaspoon pepper (plus more to taste)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1.5 cups cooked quinoa
  • 1 cup leafy greens (such as mesclun, baby kale, or spinach)
  • 0.25 cup shredded carrots
  • 1 piece avocado (diced)
  • 1 whole lemon (juice of 1 lemon)
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon sesame oil
  • 1 teaspoon hot sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 0.5 teaspoon salt

Instructions 

  • Combine oil, sesame oil, hot sauce, thyme, paprika, and salt to make marinade.
  • Marinate tofu in the mixture for at least 30 minutes.
  • Preheat oven to 400ºF (200ºC). Roast sweet potato, onion, and garlic for 20-25 minutes.
  • Cook chickpeas with spices in a skillet for 10 minutes. Fry tofu until golden, about 10 minutes per side.
  • Assemble bowl with quinoa, greens, roasted vegetables, chickpeas, tofu, carrots, and avocado. Drizzle with lemon juice.
