400gtomates concassées
750mlbouillon de légumes chaud
240gharicots blancs égouttés et rincés
240gharicots rouges égouttés et rincés
1teaspoonorigan séché
1teaspoonpaprika doux
0.25teaspoonflocons de piment
100gfeta émiettée
2tablespoonspersil frais ciselé
1tablespoonjus de citron
0.5teaspoonsel
0.25teaspoonpoivre noir
Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped onion, celery, red and yellow peppers; cook for 5-6 minutes until vegetables are tender.
Stir in garlic, tomato paste, oregano, paprika, and chili flakes; cook for 1 minute.
Add crushed tomatoes and hot vegetable broth; stir well.
Pour in orzo, simmer on low for 10-12 minutes, stirring occasionally. Add beans and cook for another 5-6 minutes until orzo is tender and sauce thickens. Season with salt, pepper, and lemon juice. Off heat, stir in half the feta and parsley. Serve topped with remaining feta and parsley.
Notes
For extra flavor, add a squeeze of lemon just before serving.
