Master Bakery Style Muffin Recipe

Enjoy bakery-style muffins with a tender crumb and customizable add-ins, perfect for breakfast or snacks.

Ingredients

dry ingredients

  • 3 cups all-purpose flour (spooned & leveled)
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)

wet ingredients

  • 1/3 cup unsalted butter, melted and slightly cooled
  • 1/3 cup vegetable oil (*)
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/3 cup sour cream or yogurt (*)
  • 1 cup milk, at room temperature (*)
  • 1 teaspoon pure vanilla extract

add-ins

  • 1-2 cups add-ins (see blog post above for suggestions)
  • optional coarse sugar for sprinkling

Instructions 

  • Preheat oven to 425°F (218°C). Grease or line a muffin pan.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients separately, then combine with dry, folding gently.
  • Divide batter into muffin cups, top with coarse sugar if desired, and bake at 425°F for 5 minutes. Reduce temperature to 350°F and bake for 25-30 minutes until golden and set.
  • Cool muffins for 10 minutes before serving. Store leftovers at room temperature or refrigerate.

Notes

Do not overmix the batter to keep muffins tender.
