Ingredients

Dairy and sweeteners

  • 3/4 cup butter
  • 1 cup honey
  • 1 teaspoon vanilla

Dry ingredients

  • cups rolled oats
  • 1 cup whole wheat or spelt flour ((or all-purpose or gluten free 1:1 flour))
  • 1/4 cup flax seed meal ((optional, add 1/4 cup more flour if not using))
  • 1 teaspoon baking soda

Add-ins

  • 1 cup total add-ins
  • 1/3 cup chocolate chips (plus 1/2 cup sunflower seeds, flaxseeds, or hemp seeds)
  • 1/2 cup dried cranberries (plus 1/2 cup chopped almonds)
  • 1/2 cup raisins (plus 1/2 cup chopped peanuts)

Instructions 

  • Preheat oven to 325°F (160°C). Line a 13" x 9" pan with parchment or lightly grease.
  • Mix melted butter, honey, and vanilla. Add oats, flour, flax meal (if using), and baking soda; stir until combined. Fold in add-ins.
  • Press mixture evenly into prepared pan. Bake for 18-20 minutes until edges are golden.
  • Cool for 10 minutes, then score into bars. Let cool completely before cutting and storing.

Notes

Store in airtight containers; freeze for longer storage.
