Ingredients

Dough

  • 2 sheets puff pastry (creates a flaky, golden, and crisp crust)

Egg Wash & Toppings

Instructions 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  • Wash, stem, and slice figs; roll out pastry and place on tray.
  • Mix sugars, cornstarch, cinnamon, lemon zest, vanilla, and salt; arrange figs on pastry, sprinkle mixture, drizzle honey and lemon juice.
  • Fold edges over filling, brush with beaten egg, sprinkle coarse sugar and thyme.
  • Bake for 30-40 minutes until golden and bubbling; cool slightly before serving.
