A quick and hearty stew combining spicy chorizo and chickpeas, perfect for a satisfying meal in under 30 minutes.

Instructions
Heat oil and cook chorizo for 3 minutes until golden.
Add garlic, thyme, paprika, and bay leaf; cook for 1 minute.
Add tomato, chickpeas, broth, salt, and pepper; simmer gently for 15 minutes, stirring occasionally.
Discard bay leaf and serve hot, ideally with crusty bread.
Notes
This stew is best enjoyed fresh and can be stored in the fridge for up to 2 days.
