A flavorful and easy baked feta orzo dish that combines creamy feta, roasted tomatoes, and herbs for a satisfying meal.

Ingredients

Dairy

  • 16 oz feta cheese (preferably whole-milk feta)
  • 1 tbsp olive oil (plus extra for drizzling)

Vegetables

  • 2 cups cherry tomatoes (halved)
  • 0.5 medium red onion (thinly sliced)
  • 3 cloves garlic (minced)

Herbs & Spices

  • 1 tsp dried oregano
  • 0.5 tsp dried basil (optional)
  • 0.25 tsp crushed red pepper flakes (optional, for heat)

Pasta & Broth

  • 1.5 cups orzo pasta
  • 3 cups vegetable or chicken broth (low-sodium preferred)

Garnish & Flavor

  • 0.25 cup fresh basil or parsley (chopped, for garnish)
  • 1 zest lemon (zest of 1 lemon, optional)

Salt & Pepper

  • to taste salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish, place feta in center, surround with tomatoes and onion.
  • Sprinkle garlic, oregano, basil, red pepper flakes, salt, and pepper over vegetables. Drizzle with more olive oil.
  • Bake for 25-30 minutes until feta is golden and tomatoes burst. Cook orzo in broth until al dente, then drain.
  • Mash feta and tomatoes to create a sauce, add orzo, and toss to coat. Add reserved cooking liquid if needed.
  • Adjust seasoning with lemon zest, salt, and pepper. Garnish with herbs and serve.

Notes

For extra flavor, add a squeeze of lemon before serving.
