Instructions
Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish, place feta in center, surround with tomatoes and onion.
Sprinkle garlic, oregano, basil, red pepper flakes, salt, and pepper over vegetables. Drizzle with more olive oil.
Bake for 25-30 minutes until feta is golden and tomatoes burst. Cook orzo in broth until al dente, then drain.
Mash feta and tomatoes to create a sauce, add orzo, and toss to coat. Add reserved cooking liquid if needed.
Adjust seasoning with lemon zest, salt, and pepper. Garnish with herbs and serve.
Notes
For extra flavor, add a squeeze of lemon before serving.
